2001 — IT STARTED WITH A DREAM
Jonah is born with a rare metabolic disorder that prevents him from breaking down the body’s natural source of stored energy – glycogen. This condition requires him to be tube-fed every 2 hours to maintain normal blood sugar levels. Jonah and his parents aren’t able to enjoy the simple luxury of sleeping more than a few hours at a time. A solution to their unique challenge is still just a dream.
2004 — THE SEARCH BEGINS
Jonah’s family teams up with a group of innovative thinkers in a search for a revolutionary energy source to help manage blood sugar levels. 2008 — A REVOLUTIONARY, NEW ENERGY SOURCE
A new discovery is made in the way starches are cooked. A patient, precise cooking process developed by scientists in Europe yields a gentle, slow-digesting carbohydrate. My own UCAN journey started four years ago when I was preparing for the Australian Ultimate Frisbee Championships and experimenting with a low-carb, high-fat (LCHF) diet for the first time. I always thought I had been eating healthy, with my “heart smart” recommended diet of cereal, bread, and pasta. However, Tim Ferris’ book, The 4-Hour Body, turned everything upside down for me.
As I started experimenting with LCHF, my challenge was to ensure my body would stay energised and recover well after 14 hours of stop-start sprinting over the three-day tournament. Fortunately, I came across a blog by Dr. Peter Attia, a cardiac surgeon who is obsessed with extending longevity, which introduced me to Generation UCAN. Since then, I have represented Australia multiple times on the world stage 🙂
